I was messing around in my friends kitchen looking for something to cook and I came up with this.

Took a casserole pan, put in three boneless chicken breasts, can of mushroom soup, some water, a can of corn, and topped it off with stuffing (no seasoning, just little bread cubes or whatever, so bread crumbs might work). baked for a little over an hour, served on top of egg noodles. Turned out very good.

I'm making swedish meatballs today.

boil 1lb-2lbs preformed meatballs in a large pot for an hour.

Then add to the pot:
seasonings (I dumped in an old swedish meatball spice packet and some allspice and some nutmeg)
1 cup milk
3-4 tablespoons butter
salt

Continue boiling until almost all the water is gone (like only a tablespoon left or something)

Gravy:
1/4 cup flour (browned a little in a pan)
slowly add beef stock to pan while whisking
add heavy cream until gravy is of desired consistancy.

Place the meatballs on a large dish and spread the gravy over them.
Enjoy.

PS
If you make lots of gravy you could also place the meatballs over some appropriate pasta.

EDIT:
I just finished eating this treat. Turned out really good. I even boiled up some Fusilli pasta and mixed that in. MMmmmmmm.

Tried jambalaya for the first time last weekend.

Pretty good. I'm sure it doesn't stack up to the real, authentic stuff, but for a small restaurant in Waterville, Ohio, it was pretty good I thought.

I just like doing the "jazz-guy Zatarain's" voice even though I've never tried any of their stuff that I can recall. Maybe I'll give it a shot now.

I grew up in a Mexican-American household and to me, flour tortillas taste gross when they get wet and really gross when sandwiched in between things, particularly greasy things like cheese and carne molida. Also, I might try a small bit of that "pie" but it's got way too much cheese and meat... I never heard of a taco that consisted of so much cheese... here we are venturing into enchilada territory, and you'd make those with corn tortillas. More likely we'd add some beans or rice or potatoes or even make it of all meat with just a little cheese.

I'll share an easy recipe here that's not much to cook but it's one of my favorite things to eat and is less likely to kill you than a burrito pie.

Avocado Torta:

1/2 avocado
1 torta or bolio bread (I suppose you can use a baguette if there's no Latin American bread in your area). The two most popular types are round and soft or football shaped and crunchy on the outside. Either is fine.
1 tomato
1 onion
salt and pepper
optional Casero cheese.

Cut yer bolio/torta open and (if you wish) place it in the toaster oven until the outside is a little toasted. If it's toasty already that's fine.

Cut the avocado open and slice it into thin slices and layer it onto the bread. Don't put the skin into the bread (duh).

score the avocado slices so they spread evenly over the bread. Salt to taste.

Slice the tomato into thin slices and place on top of avocado. Lightly salt the tomato and add freshly ground pepper over the top of them.

Slice the onion into rings and break those in half, stick as many or as little as you'd like.

Add the cheese if you'd like. The best kind is semi-crubly, white and salted. I usually skip the cheese.

Boom, all done and delicious. Totally simple and fast. Enjoy your torta.

Instructions for my favorite sandwich:

1. Mayo on one slice of bread
2. Peanut butter on another slice of bread
3. Piece of baloney on one side
4. Piece of American cheese on the other
5. Combine
6. Put into food-hole
7. Win

It doesn't matter if you put the baloney on the mayo side or the peanut butter side, although to the connoisseur such as myself, it does subtly alter both the texture and flavor sequence of the sandwich, so I like to switch it up from time to time.

Also, I often sub in Cotto Salami for the baloney, or use a mixture of the two. You can also get nutty and double or triple the cheese and baloney dosage to really get that "I can feel my arteries hardening" sensation I love so much when I bite into a sandwich.

I'm grilling everything. Hotdogs, hamburgers, steak. My parent's freezer is going so they're trying to empty it - I could eat nothing but steak till I was bursting for a whole week and still there would be steak left over.

Have these soggy potstickers too. I think they're meant for soup rather than they type you just eat; they're so bad you can't just eat them. Trying to figure out a way to grill those too.

When I'm out of ideas, I always make up the 'ol reliable: chicken parm.

It's pretty easy, just dip chicken into a bowl of scrambled eggs (not cooked, of course)
then dip 'em in bread crumbs,
pour on tomato sauce
line them up in a pan and bake in the oven.

plus, everyone likes chicken parm--it's a good easy thing to make if you've got guests/a date coming over.
