This is the best thread going. Definitely trying that chicken parm. I just read BleuSphere's Swedish meatball recipe. Holy crap does that sound good.

A few days ago I made some Mandaring Beef from a Chinese cookbook. I modded the recipe a little to suit my tastes. I think it turned out great. Very delicious.

I did that rather than grill the steak on my dad's propane grill. Gah!

My GF likes to browse that site. I'm not complaining.

It's in the oven!

Heh, just realized the double entendre there, Joe. Can I call you Joe?

So the burrito pie was excellent. Leftovers for two nights.

Did you follow the recipe exact? Every time we make it it's a little bit different.

Yeah, almost exactly. Next time I might spice it up a little more, maybe add some hot peppers or something. The canned veggies are good, but I'd like to do it all fresh, see what that's like.

This is both excellent and stupidly easy to make. If you're a big fan of salty foods like I am, do not miss this recipe:

Pignata Di Agnello (Lamb Stew)

3 lbs boneless trimmed lamb shoulder, cut into 2” cubes
2 lbs. New potatoes, peeled and cut into 2” cubes
1/3 lb. Pecorino cheese, cut into ½” cubes
¼ lb. Soppressata or spicy salami, cut into ¼” cubes
2 tsp. Crushed red chile flakes
4 sprigs thyme
2 carrots, peeled and cut crosswise into 1/4” thick coins
1 large onion, roughly chopped
1 rib celery, chopped
½ head (about 12 oz.) curly endive or escarole, ends trimmed and roughly chopped
Kosher salt and freshly ground black pepper to taste

Combine ingredients in a 5-qt. Dutge oven with 2.25 cups water. Cover pot with aluminum foil and then with the pot lid to create a tight seal. Cook over medium-low heat, shaking dutch oven occasionally, until the lamb and potatoes are tender and the juices have thickened slightly, about 2.5 hours.

I'm making some chili today. Thawing out the hamburger right now.

I'm gonna slow cook it for 3 hours before I eat any. I'm also planning on making this the spiciest batch to date.
